A place of rare beauty, Fattoria San Giusto in Rentennano is housed in an ancient Cistercian monastery near Gaiole, the southernmost of the Chianti Classico production centre.
A blend of 97% Sangiovese and 3% Canaiolo grapes, hand-picked when perfectly mature. It is fermented in concrete and stainless-steel vats for 18 days, before ageing in French oak barrels for a period of 16 to 20 months. Le Baroncole is then bottled and stored for a further six months.
An intense ruby red colour. Aromas of sour cheery and rose with a touch of spice. The palate is elegant, full-bodied, and well-structured, with firm and decisive tannins.
Perfect paired with ribeye steak, roast lamb with rosemary and garlic, Tuscan-style sausages and beans, pheasant and boar, mushrooms, and vegetarian burgers. Drink now until 2028. This wine has only been lightly filtered, so some sediment may appear in the bottle.
