This is an utter delight – a Southern Spanish white made from one of the most famous grapes in the region, but in a style rarely adopted by it! Interested? We most certainly were!
The wine is clean as a whistle with notes of green apple, citrus and really attractive floral characteristics. It’s unfiltered and unfined, which will leave some level of cloudiness, but this adds to the texture and the engaging salinity of the finish.
Made with as little winery intervention as possible, there is a minuscule addition of sulphur just before bottling to avoid any potential unforeseen unpleasantnesses that some other natural-type things can posses. Which is reassuring to us, at least.
A really lovely addition to our repertoire and hopefully yours too, bringing a slightly different aspect of sunny Spain to your dinners: it’s absolutely perfect with seafood or salads and is a delicious accompaniment to jamón cheese toastie. Trust me. Plus there’s only 11.5% alcohol.
Palomino? It is the grape used to make Fino Sherry. However! This is a conventional white wine that has none of the Sherry aromas (most of which come from the particular and peculiar method by which Sherry is aged). Therefore you get all the fruitiness and acidity that the Sherry process, by its nature, strips from the wine in Fino and Manzanilla styles. This means that for a vast majority, this is the first real flavour of the grape (rather than the process) that has been tasted. Pretty cool, huh?
And one more thing… because it is not made in the Sherry way, it cannot be called Jerez or use any of that terminology, hence, Vino de la Tierra de Cádiz. So there!
