• Meticulous Vinification: Fruit for this Chardonnay is meticulously sourced from three hand-harvested blocks, ensuring optimal ripeness. Whole bunch pressing with a period of skin contact sets the stage for fermentation, initiated in stainless steel with ambient yeast. The fermenting juice then undergoes maturation in French barrique’s, followed by bâtonnage to enhance the wine’s mid-palate. Ten months of barrel maturation on the fine lees adds richness, culminating in a wine of exceptional depth and character.
