La Violetta Das Sakrileg Riesling 2021
La Violetta began producing small quantities of wine in Denmark, Western Australia, in 2008. The name derives from an old Piedmontese song celebrating intoxicating.

La Violetta Das Sakrileg Riesling 2021 pairs with anything, it doesn’t matter, this will hold its own no matter what you throw at it.
Grapes are from a handful of trusted growers and from some of the oldest vineyards in the state. Production is small, enabling the team to take the greatest amount of care in the making of each of their wines.
Inspiration for Das Sakrileg is partly by winemakers of the Mosel Valley and Alsace, but mostly just to provoke. Grapes are from a single Denmark site on sandy loam over clay and granite. Unlike with the classic, steely examples from Europe, the juice is oxidatively handled. Fermentation in wild barrels, matured on unsulphured lees, and sometimes even undergoes partial malolactic fermentation.
