Since his first vintage in 2001, Javier Dominguez’s Dominio do Bibei is the driving force behind the emergence of . His family bought land in the Bibei valley, Ribeira’s most easterly sub-region. Today the 140 hectare estate are home to 45 hectares of vines. Since then, he has worked tirelessly to revive the region and its indigenous vines.

Dominio do Bibei Lalume is a blend of 85% Mencia and other indigenous grape varieties. Growing vines at varying degrees of elevation, between 300 to 700 metres above sea level.

The vine age varies between 25 and 100 years old. Harvesting by hand, destemming and undergo cold maceration for two days prior to fermentation. Punch downs are carried out every day, and the wine undergoes a long post-fermentation maceration. The wine then undergoes malolactic fermentation in French oak, followed by 18 months ageing in barrel, and 12 months in bottle.
