Aperol is an Italian aperitif, a popular and iconic orange coloured liqueur. It was originally created in 1919 by the Barbieri brothers in Padua, Italy. Aperol is known for its bittersweet flavour profile, which comes from a combination of bitter orange, gentian, rhubarb, and various herbs and spices.

• 3 parts Prosecco (about 90 ml)
• 2 parts Aperol (about 60 ml)
• Splash of soda water
• Ice cubes
• Orange slice (for garnish)

Instructions:

1. Fill a wine glass or a large balloon glass with ice cubes
2. Pour the Prosecco over the ice (about 3 parts or 90 ml)
3. Add the Aperol (about 2 parts or 60 ml) to the glass
4. Top it off with a splash of soda water
